Stuffed butternut squash

When the weather gets colder, we are all looking for some comfort foods and I'm not gonna lie, I'm no different. That's why I decided to prepare something healthy, nutricious and veeery comforting.
Because fall is always the time when I'm obsessed with butternut squash, it was obvious for me to use it today. The squash is stuffed with quinoa and kale. Quinoa was my love from the first bite, but I wasn't so crazy about kale. But because it's loaded in vitamins and minerals I decided to give it another chance. Forget about all those kale chips and salads, this is the way you should treat this veggie.

INGREDIENTS:
1 butternut Squash cut in half lenghtwise
bunch of kale, stems removed and chopped
1/2 glass of quinoa, boiled
1 red onion, chopped
2 gloves of garlic, chopped
tbsp of chopped almonds
fresh thyme and parsley, chopped
salt and pepper to taste
goat's cheese for topping
DIRECTIONS:
1.Preheat the oven to 180 °C
2. In a large bowl, mix all the ingredients, apart from goat's cheese
3. Scoop out flesh from squash, leaving 1cm on sides and bottom
4. Mix the squash with the quinoa and kale mixture
5. Top with goat's cheese cut into little squares
6. Cover with kitchen foil and place in the oven for 35 mins or until the squash is done
7. Remove the kitchen foil and place it in the oven for another 15 mins until gold and crispy.
